Coconut Flour Banana Bread!
OMG!! It’s sooooo good!!!

I hope you are doing well!

I made this banana bread over the weekend and it was just toooo good not to share:) It’s moist, not too sweet and totally melts in your mouth. You can smear some yummy grass fed butter on it… some almond butter or preserves. Or just plain, it’s delicious and easy to make.

INGREDIENTS

  • ½ cup coconut flour
  • ½ tsp baking soda
  • ¼ tsp unrefined sea salt
  • 3 eggs
  • ½ cup of melted ghee or coconut oil
  • ¼ cup full fat coconut milk
  • ⅓ cup smashed ripe banana
  • 1 tbs raw honey
  • 1 tsp cinnamon
  • 2 egg whites
  • ghee or coconut oil for oiling pan

DIRECTIONS

  1. Preheat oven to 350’F.
  2. Liberally oil a 5 3/4 x 3″ mini loaf pan
  3. In a large bowl, whisk together coconut flour, baking soda & salt. Set aside.
  4. In another bowl, whisk together 3 eggs, fat of choice, coconut milk, mashed banana and honey until well incorporated.20170507_195333
  5. Combine wet ingredients to dry and mix until you have a smooth batter
  6. In another large bowl, beat egg whites with a hand mixer until soft peaks form.20170507_195811 (2)
  7. Gently fold egg whites into batter. Do not over mix here.  You want the batter to be fluffy!
  8. Bake for 30-35 minutes or until golden and a toothpick inserted into the center comes out clean.
  9. Flip pan over to pop out loaf.  Don’t let cool in the pan for too long or the coconut oil might harden and adhere to the pan.
  10. Slice and serve with whatever your heart desires.  Enjoy!!
